The Granton Edge slicing knife features a 1-1/4 inch Rosewood handle and is primarily intended for carving hot or cold roasts and fowl, while also being suitable for cutting large vegetables, cakes, and general utility work. Typically available with an 8 or 10 inch blade, this stamped knife is cut from a cold rolled piece of steel, then ground, tempered, and sharpened, resulting in a lighter and narrower blade that requires fewer manufacturing steps than forged knives. While stamped knives may not possess the weight or feel of forged blades, they perform excellently and can approach similar quality. The knife is made from quality steel with an X50Cr Mo composition, achieving a Rockwell hardness of 55-56 HRC for high edge retention. All blades are conically ground along their full length and also ground crosswise, creating a wider break point that minimizes blade fracturing and reduces cutting resistance, thereby ensuring a lifetime of sharp edge and performance.
