The SC Preferred heater/proofer holding cabinet is constructed from sturdy aluminum with heavy-duty channel construction for long-lasting durability and dependability. It features an air baffle and circulating air blower for even heat distribution, and electronically controlled heating and humidifying systems to maintain food freshness during storage or transport. The appliance offers easy dual proof/heat control, with a "Proof" mode providing humidity ranging from 30% to 95% and temperatures up to 115°F (46°C), and a "Heat" mode with a nominal temperature up to 180°F (82°C). It includes a tight-fitting, lift-off clear door with a gasket inside the frame, protective four-corner bumpers, and a removable drip pan. Five-inch polyurethane plate casters with dual brakes ensure easy maneuverability. The unit meets cUL standards.
