The Vollrath Mirage induction rethermalizer, model 74110140, has an 11 quart capacity and comes in red. This unit features induction heating, eliminating the need for water, resulting in faster retherm times and improved temperature control. It is equipped with digital controls that allow users to set temperatures in both °F and °C, or utilize presets for various items such as soup, chowder, chili, and mac & cheese. The kit includes Vollrath induction-ready insets and an inset cover, which are required for operation; failure to use these insets may cause damage to the unit and void the warranty. Additionally, the rethermalizer features a unique stirring indicator that monitors temperature differentials within the soup vessel and alerts operators when stirring is necessary, along with a programmed retherm mode.
